In AMERICA THE BOUNTIFUL: AMERICA'S 250th ANNIVERSARY SPECIAL, host Capri Cafaro travels to storied locations of colonial America to trace the food roots of the national palate. In the period leading up to 1776 and continuing through the Revolutionary War, several events led to a drastic change in the foodways, agricultural practices and eating habits of American colonists. As British trade policies and taxation became more unfavorable, colonists began enacting changes that would make their foodways less reliant on British imports. This included diversification of crops, adoption of additional preservation techniques for meat and dairy, and increased hunting and trapping of a wider variety of small game animals. The hour-long special highlights the historic foods and drinks colonists were growing, harvesting and producing as they became food independent, a critical factor in their victory over the British.
